Shirine Abdallah's Apple Cake
Ingredients
For the filling:
5 apples, diced
1 cup chopped walnuts
1 cup raisins
1 spoonful cinnamon powder
1 pinch nutmeg powder
1 tablespoon alcohol of your choice (cognac, rum, Grand Marnier)
1 squeezed orange, juiced
For the dough:
2 eggs
1 1/2 cups white sugar
2 cups flour
1 cup corn oil
1 large pinch or teaspoon vanilla (powdered or liquid)
2 teaspoons baking powder
1 teaspoon lemon zest
Preparation:
Macerate the filling in the orange juice for 2 to 3 hours.
Mix dough and filling, then pour into a buttered and floured tin.
Bake for 1 hour at 176 degrees Celsius or 350 degrees Fahrenheit.
